I love guacamole. Eric was never really a fan of it until we moved to Texas. I love it even more after living there, and I miss all the wonderful and authentic Tex-Mex food Texas has to offer. Neither of us had ever made guacamole, but we figured it couldn’t be too hard. It’s one of those things that anyone can make, even without a recipe. That’s because guacamole is really up to your individual tastes. We made this to have along with steak fajitas. Who am I kidding? We actually made it to have while making steak fajitas. 🙂
Here’s what we did, but feel free just to use it as a guideline rather than an actual recipe. This was the perfect amount for the two of us.
1/2 plum tomato
1/4 cup red onion
1/2 jalapeno, seeds and ribs removed
freshly squeezed lime juice
freshly ground pepper
-Peel and pit avocado.
-Finely dice tomato, red onion and jalapeno.
-Combine all ingredients, making sure to squeeze a little extra lime juice on top.
