1 tablespoon hot pepper jelly
1 teaspoon Dijon mustard
Pinch red pepper flakes
¼ teaspoon kosher salt
Pinch freshly ground black pepper
1 cup cherries, pitted and halved
1 Brie round (about 13 ounces), packed in a wooden box
Baguette slices and/or crackers, for serving
Heat oven to 350º. In a small bowl, stir together the pepper jelly, mustard, red pepper flakes, salt, pepper and cherries.
Use a sharp knife or vegetable peeler to remove the rind from the top of the wheel of brie, then use a spoon to scoop out about half an inch of cheese from the center.
Place the box on a rimmed baking sheet and bake for 10 minutes. Remove from oven and top with the cherry mixture, mounding it slightly. Bake for an additional 5 minutes, or until the cheese is melted. Transfer the box to a serving platter and serve immediately.
