2 slices of peach, plus more for garnish
¼–½ ounce simple syrup (depending on preference and sweetness of peach)
3-4 mint leaves, plus more for garnish
5 dashes of bitters (preferably peach)
2 ounces bourbon or whiskey
Club soda (optional)
Muddle first four ingredients in rocks glass until mint leaves are bruised and peach slices have released their juices. Fill glass with ice, add bourbon and stir to combine. Top with a splash of club soda, if desired, and garnish with peach slice and mint sprig.
