2 cups unsweetened shredded coconut
1½ cups rolled oats
1 cup peanut (or other nut) butter
⅔ cup finely chopped dark chocolate
½ cup honey
1 teaspoon vanilla extract
¼ teaspoon kosher salt
Make sure to use an unsweetened peanut butter for these. You can roll the assembled balls in melted chocolate, coconut, nuts or really anything else you want, but we liked them just the way the were.
Place the coconut and rolled oats in the bowl of a food processor and pulse into a fine powder. Empty into a large bowl. Add the remaining ingredients and stir with a spatula until combined. The mixture should resemble cookie dough. Refrigerate for 5-10 minutes.
Using a tablespoon-sized scoop, scoop out the dough onto a baking sheet. (I only had a 1.5 tablespoon-sized scoop and got 36 balls, which were about two bites each.) Roll each scoop between your palms to form a ball. Dip/roll in toppings, if desired.
Store in an airtight container in the refrigerator for about a week (if they last that long!).
