Creamy Parmesan Orzo
This creamy parmesan orzo is a simple side dish that’s made with just a few ingredients. The parmesan cheese makes it ultra creamy even though the orzo is just cooked in chicken broth and water.
This orzo is a fantastic side dish. The only time we’ve ever made orzo is when we bought it already flavored in a box. This time, we decided to try to flavor it ourselves. I can’t tell you how glad I am that we tried this recipe. The Parmesan gives the orzo a rich flavor and creamy texture. I think plain orzo can be so versatile, and I’m looking forward to testing out more flavor combinations with it. We’ll definitely be making this again and again because it was just that good. I had the leftover orzo as part of my lunch the next day, and I think it might have tasted even better than it did the night before. If you’re looking for a new side dish, I highly recommend this one.
- COOK TIME:
1 tablespoon butter
1 cup orzo
1¼ cups less-sodium chicken broth
1¼ cups water
¼ cup (1 ounce) grated fresh Parmesan cheese
2 tablespoons parsley
¼ teaspoon salt
½ teaspoon freshly ground black pepper

Heat butter in a medium saucepan over medium heat. Add orzo and cook three minutes, stirring constantly. Stir in broth and water; bring to a boil. Reduce heat and simmer until liquid is absorbed, about 15 minutes.

Remove from heat. Stir in cheese, parsley, salt and pepper.

I cooked this tonight and it was really good…and super easy! Mine wasn't as creamy as it looks in the picture, but i think it is because I didn't use fresh parm. I used what I had on hand. I can't wait to try some other recipes!
